Ingredients

1 pound boneless, skinless chicken breast, cut into bite-sized pieces

3 tablespoons olive oil

2 tablespoons honey

2 tablespoons soy sauce

2 tablespoons sriracha sauce (adjust to taste)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Fresh cilantro leaves (for garnish, optional)

Instructions

Marinate the Chicken: In a large bowl, whisk together the olive oil, honey, soy sauce, sriracha, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Add the chicken pieces and toss to coat evenly. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

Preheat the Grill: Preheat your grill or grill pan over medium-high heat. If using a grill, ensure it’s clean and lightly oiled to prevent sticking.

Skewer the Chicken: If using wooden skewers, soak them in water for about 30 minutes before grilling to prevent burning. Thread the marinated chicken pieces onto the skewers, ensuring there is enough space between each piece for even cooking.

Grill the Chicken: Place the skewers on the preheated grill. Cook for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

Serve: Remove the chicken bites from the grill and let them rest for a minute. Transfer to a serving platter and garnish with chopped green onions and fresh cilantro, if desired.

Enjoy: Serve hot with your favorite dipping sauce or over a bed of rice or salad for a complete meal.
