Ingredients

2 pounds chicken wings, split and tips removed

1 cup honey

1/4 cup soy sauce

1/4 cup sriracha sauce (adjust for spice preference)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon apple cider vinegar

1 teaspoon sesame oil

1/2 teaspoon black pepper

1 teaspoon salt

2 tablespoons vegetable oil (for frying)

Sesame seeds (for garnish)

Green onions, thinly sliced (for garnish)

Instructions

Marinate the Wings: In a large bowl, combine honey, soy sauce, sriracha, minced garlic, grated ginger, apple cider vinegar, sesame oil, black pepper, and salt. Whisk until well blended. Add chicken wings to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, preferably overnight for more flavor.

Prepare the Frying Oil: When ready to cook, heat vegetable oil in a deep fryer or large pot over medium-high heat until it reaches 375°F (190°C).

Fry the Wings: Carefully add wings to the hot oil in batches. Fry for about 8-10 minutes, turning occasionally, until they are golden brown and crispy. Use a slotted spoon to transfer wings to a wire rack or paper towels to drain excess oil.

Make the Glaze: In a small saucepan, pour the remaining marinade (be sure to reserve a bit if you’d like extra glaze for serving). Bring to a boil over medium heat. Reduce heat and simmer for 5 minutes until slightly thickened.

Coat the Wings: In a large mixing bowl, add the crispy wings and pour the simmered glaze over them. Toss until wings are evenly coated in the spicy sweet sauce.

Serve: Plate the wings, garnishing with sesame seeds and sliced green onions for a pop of color and flavor. Serve immediately with celery sticks and your favorite dipping sauce on the side, if desired.
