Spicy Korean BBQ Chicken Bites

Ingredients
  

1 lb (450 g) boneless, skinless chicken thighs, cut into 1-inch pieces

3 tablespoons gochujang (Korean chili paste)

2 tablespoons soy sauce

1 tablespoon honey

2 teaspoons sesame oil

2 cloves garlic, minced

1 teaspoon ginger, minced

1 tablespoon rice vinegar

1 tablespoon vegetable oil (for frying)

1 tablespoon toasted sesame seeds (for garnish)

2 green onions, thinly sliced (for garnish)

Optional: lettuce leaves for serving

Instructions
 

Marinate the Chicken: In a medium bowl, mix the gochujang, soy sauce, honey, sesame oil, minced garlic, minced ginger, and rice vinegar. Add the chicken pieces and coat well with the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

    Heat the Oil: In a large frying pan or skillet, heat the vegetable oil over medium-high heat until shimmering.

      Cook the Chicken: Remove the chicken from the marinated mixture and add it to the hot skillet. Cook the chicken pieces in batches if necessary to avoid overcrowding. Sauté for about 4-5 minutes on each side until the chicken is golden brown and cooked through (internal temperature should reach 165°F/75°C).

        Glaze the Chicken: Once all the chicken is cooked, pour the remaining marinade into the skillet and cook for an additional 2-3 minutes, stirring to coat the chicken with the thickened glaze.

          Garnish and Serve: Remove from heat. Sprinkle the toasted sesame seeds and sliced green onions over the top. Serve hot, optionally with lettuce leaves for wraps or alongside rice.
