1 can (15 oz) chickpeas, rinsed and drained

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to spice preference)

Salt and black pepper, to taste

Juice of 1 lime

Zest of 1 lime

1 small red onion, finely diced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1 avocado, sliced

4 large flour or whole wheat tortillas

Optional toppings: sour cream, hot sauce, or lettuce

Instructions
 

Prepare the Chickpeas: In a medium bowl, add the rinsed and drained chickpeas. Use a fork or potato masher to gently mash them, leaving some whole for texture.

    Season the Chickpeas: In a skillet, heat olive oil over medium heat. Add the mashed chickpeas, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper. Stir and cook for about 5-7 minutes until the spices are fragrant and the chickpeas are heated through.

      Add Fresh Ingredients: Remove the skillet from the heat and add lime juice, lime zest, diced red onion, halved cherry tomatoes, and chopped cilantro. Toss gently to combine all the flavors.

        Warm the Tortillas: In a dry skillet or microwave, warm each tortilla for 10-15 seconds to make them pliable.

          Assemble the Wraps: Lay a tortilla flat and spoon some of the spicy chickpea mixture in the center. Add a few slices of avocado and any additional toppings like sour cream or a drizzle of hot sauce.

            Wrap it Up: Fold in the sides of the tortilla and then roll it up tightly from the bottom, securing the filling inside.

              Serve: Cut the wraps in half diagonally and serve immediately, garnished with extra cilantro and lime wedges on the side if desired.
