1 lb salmon fillet, skin removed and cut into bite-sized cubes

1 ripe mango, diced

2 tbsp honey

1 tbsp soy sauce

1 tbsp Sriracha sauce (or more to taste)

1 clove garlic, minced

1 tsp fresh ginger, grated

1 tbsp lime juice

1 tbsp vegetable oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Mango Glaze:

    - In a blender or food processor, combine the diced mango, honey, soy sauce, Sriracha, minced garlic, grated ginger, and lime juice. Blend until smooth. Adjust seasoning by adding more Sriracha for heat or honey for sweetness.

      Marinate the Salmon:

        - In a mixing bowl, toss the salmon cubes with a pinch of salt and pepper. Pour half of the mango glaze over the salmon and let it marinate for at least 15 minutes to infuse the flavors.

          Cook the Salmon Bites:

            - Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the marinated salmon cubes, cooking them for about 2-3 minutes on each side, until they are golden brown and cooked through. Ensure not to overcrowd the pan; you may need to do this in batches.

              Glaze the Salmon:

                - After cooking the salmon bites, reduce the heat and pour the remaining mango glaze into the skillet. Gently toss the salmon in the glaze for about a minute, allowing it to caramelize slightly. Remove from heat.
