2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon cayenne pepper (adjust to taste for spice)

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/4 cup molasses

1 large egg

1 teaspoon vanilla extract

1 cup granulated sugar (for rolling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Mix Dry Ingredients: In a mixing bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, ground ginger, ground cloves, and cayenne pepper. Set aside.

      Cream Butter and Sugar: In a large bowl, use an electric mixer to cream the softened butter and brown sugar until light and fluffy, about 2-3 minutes.

        Add Molasses and Egg: Mix in the molasses, egg, and vanilla extract until well blended.

          Combine Mixtures: Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

            Form Cookies: Using a cookie scoop or tablespoon, portion out the dough and roll each piece into a ball. Then, roll each ball in granulated sugar to coat.

              Bake: Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers still look slightly underbaked.

                Cool: Remove from the oven and let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
