Spinach and Artichoke Pasta Bake

8 oz (about 225g) fusilli or penne pasta

2 cups fresh spinach, chopped

1 can (14 oz) artichoke hearts, drained and chopped

1 cup ricotta cheese

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese, plus extra for topping

1 cup shredded mozzarella cheese, divided

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

Salt and black pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté Spinach and Garlic: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat.

        Prepare Cheese Mixture: In a large mixing bowl, combine the ricotta cheese, cream cheese, and Parmesan cheese. Mix until smooth. Add the wilted spinach, chopped artichokes, half of the mozzarella, red pepper flakes (if using), salt, and black pepper. Fold in the cooked pasta until well combined.

          Assemble the Bake: Transfer the pasta mixture into a greased 9x13 inch (or similar-sized) baking dish. Spread evenly. Top with the remaining mozzarella cheese and a sprinkle of extra Parmesan cheese.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes. The top should be golden and bubbly.

              Garnish and Serve: Remove from the oven and let it sit for about 5 minutes before serving. Garnish with freshly chopped parsley. Enjoy your creamy goodness!
