Spinach and Cheese Manicotti

12 manicotti shells

2 cups fresh spinach, chopped

15 oz ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1 large egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

3 cups marinara sauce

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Manicotti Shells: Cook the manicotti shells according to package instructions until al dente. Drain and rinse under cold water to prevent sticking. Set aside.

      Make the Filling: In a large mixing bowl, combine chopped spinach, ricotta cheese, 1/2 cup of mozzarella cheese, 1/4 cup of Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

        Stuff the Shells: Using a spoon or a piping bag, carefully fill each manicotti shell with the cheese and spinach mixture. Avoid overfilling to prevent spilling during cooking.

          Arrange in Baking Dish: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13 inch baking dish. Place the stuffed manicotti on top of the sauce in a single layer.

            Pour Remaining Sauce: Pour the remaining marinara sauce over the manicotti shells. Sprinkle the remaining mozzarella and Parmesan cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes until bubbly and golden on top.

                Garnish & Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired. Serve hot and enjoy your delicious Spinach and Ricotta Stuffed Manicotti!
