8 large eggs

1 cup fresh spinach, chopped

1/2 cup goat cheese, crumbled

1/2 cup cherry tomatoes, halved

1/4 cup onion, finely chopped

2 cloves garlic, minced

1/4 cup milk (or cream for a richer flavor)

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large, oven-safe skillet, heat olive oil over medium heat. Add the chopped onions and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.

      Add the Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season with a pinch of salt and pepper.

        Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Pour this mixture into the skillet with the sautéed vegetables.

          Incorporate Cheese and Tomatoes: Gently fold in the crumbled goat cheese and halved cherry tomatoes, making sure they are evenly distributed throughout the egg mixture.

            Cook on Stovetop: Let the frittata cook on the stovetop for about 5 minutes, just until the edges start to set.

              Transfer to Oven: Carefully place the skillet in the preheated oven and bake for about 15-20 minutes, or until the center is set and the top is slightly golden.
