Spinach Chicken Casserole with Cream Cheese and Mozzarella

2 cups cooked chicken, shredded

4 cups fresh spinach, chopped

8 oz cream cheese, softened

1 cup mozzarella cheese, shredded (divided)

1/2 cup sour cream

1/2 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional)

1 cup breadcrumbs (for topping)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken Mixture: In a large bowl, combine the shredded chicken, chopped spinach, softened cream cheese, sour cream, half the mozzarella, chicken broth, garlic powder, onion powder, salt, black pepper, and crushed red pepper flakes (if using). Mix until well combined and creamy.

      Transfer to Dish: Spoon the chicken and spinach mixture into a greased 9x13 inch baking dish, spreading it evenly.

        Prepare Topping: In a small bowl, mix the breadcrumbs with olive oil until they are well-coated. This will help them get golden and crispy during baking.
