6 large eggs

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup milk (or dairy-free alternative)

1/4 cup bell pepper, diced (any color)

1/4 cup onion, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Olive oil or non-stick cooking spray for greasing muffin tin

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with olive oil or non-stick cooking spray to ensure easy removal of the muffins.

    Prepare the Vegetables: In a medium skillet, heat a teaspoon of olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for 3-4 minutes until softened. Add the chopped spinach and cook for an additional 2 minutes until wilted. Remove from heat and set aside to cool slightly.

      Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk them together until fully blended. Add in the milk, garlic powder, salt, black pepper, and red pepper flakes (if using). Mix well.

        Combine Ingredients: Fold the sautéed vegetables and crumbled feta cheese into the egg mixture. Ensure all ingredients are evenly distributed.

          Fill the Muffin Tin: Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full. This will allow room for the muffins to rise while baking.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are puffed and a toothpick inserted in the center comes out clean.

              Cool and Serve: Remove the muffin tin from the oven and let it cool for about 5 minutes. Gently run a knife around the edges of each muffin to help loosen them. Carefully remove the muffins and transfer them to a wire rack to cool completely.
