Sriracha Honey Glazed Carrots

Ingredients
  

1 lb (450g) baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons honey

2 tablespoons Sriracha sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon ginger powder (or freshly grated ginger)

Salt and black pepper, to taste

1 tablespoon freshly chopped parsley (for garnish, optional)

1 tablespoon sesame seeds (for garnish, optional)

Instructions
 

Preheat the oven to 425°F (220°C).

    Prepare the glaze: In a mixing bowl, combine the honey, Sriracha sauce, olive oil, garlic powder, ginger powder, salt, and black pepper. Whisk until smooth and well blended.

      Toss the carrots: In a large bowl, add the baby carrots and pour the glaze over them. Toss until all the carrots are evenly coated with the honey Sriracha mixture.

        Arrange on a baking sheet: Spread the glazed carrots in a single layer on a parchment-lined baking sheet, making sure they are not overcrowded.

          Roast the carrots: Place the baking sheet in the oven and roast for 20-25 minutes, flipping the carrots halfway through, until the carrots are tender and caramelized at the edges.

            Garnish: Remove the carrots from the oven and sprinkle with freshly chopped parsley and sesame seeds, if using.

              Serve: Transfer the glazed carrots to a serving dish and enjoy them warm as a side dish for any meal!
