Ingredients

For the Dough:

3 ½ cups all-purpose flour, plus extra for dusting

1 packet (2 ¼ tsp) instant yeast

½ cup whole milk, warmed

¼ cup granulated sugar

½ tsp salt

⅓ cup unsalted butter, melted

2 large eggs

For the Filling:

1 cup strawberries, diced

½ cup cream cheese, softened

¼ cup powdered sugar

1 tsp vanilla extract

1 tsp lemon zest

2 tbsp all-purpose flour

For Topping (Cream Cheese Glaze):

4 oz cream cheese, softened

1 cup powdered sugar

2 tbsp milk

1 tsp vanilla extract

Instructions

Prepare the Dough: In a large mixing bowl, combine the warmed milk, sugar, and instant yeast. Let it sit for about 5-10 minutes until it becomes frothy. In another bowl, whisk together the melted butter, eggs, and salt. Add the butter mixture to the yeast mixture.

Mix the Dry Ingredients: Gradually add 3 ½ cups of all-purpose flour to the wet mixture, mixing until a soft dough begins to form. If the dough seems too sticky, you can add small amounts of flour until it’s manageable.

Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a kitchen towel, and let it rise in a warm spot for 1-1.5 hours, or until doubled in size.

Prepare the Filling: In a medium bowl, combine the softened cream cheese, powdered sugar, vanilla extract, lemon zest, and all-purpose flour. Mix until smooth and creamy. Gently fold in the diced strawberries.

Roll Out the Dough: Once the dough has risen, punch it down and roll it out on a floured surface into a large rectangle (about 16x12 inches).

Spread the Filling: Evenly spread the cream cheese mixture over the dough, leaving a small border around the edges. Sprinkle the remaining diced strawberries over the filling.

Roll Up the Dough: Starting from one of the long edges, carefully roll the dough tightly into a log. Pinch the seam to seal, and cut the log into 12 equal pieces.

Prepare for Baking: Place the rolls in a greased 9x13 inch baking dish. Cover with a kitchen towel and let them rise for about 30-45 minutes until puffed.

Preheat the Oven: Preheat your oven to 350°F (175°C).

Bake the Rolls: Bake the rolls for 25-30 minutes, until golden brown and cooked through.

Make the Glaze: While the rolls are baking, prepare the cream cheese glaze by mixing softened cream cheese, powdered sugar, milk, and vanilla until smooth and pourable.

Glaze the Rolls: Once the rolls are finished baking, let them cool slightly before drizzling the cream cheese glaze on top.

Serve and Enjoy: Serve the strawberry cheesecake cinnabon rolls warm and enjoy the delicious blend of flavors!
