Ingredients
  

1 cup couscous

1 ¼ cups vegetable broth (or water)

1 cup fresh strawberries, hulled and sliced

½ cup crumbled feta cheese

½ cup cucumber, diced

¼ cup red onion, finely chopped

¼ cup fresh mint leaves, chopped

¼ cup balsamic vinegar

3 tablespoons olive oil

Salt and pepper to taste

Optional: ¼ cup toasted almonds or walnuts for crunch

Instructions
 

Cook the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for about 5 minutes until the liquid is absorbed. Fluff the couscous with a fork and set it aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper until fully combined. Adjust seasoning to taste.

      Combine the Salad: In a large mixing bowl, combine the cooled couscous, sliced strawberries, crumbled feta cheese, diced cucumber, red onion, and chopped mint leaves.

        Dress the Salad: Pour the prepared dressing over the couscous salad and gently toss everything together until well coated.

          Add Optional Crunch: If using, sprinkle the toasted almonds or walnuts over the top and mix gently.

            Serve: Taste and adjust the seasoning if needed. Serve the salad chilled or at room temperature.
