1 cup couscous

1 ¼ cups vegetable broth (or water)

1 cup fresh strawberries, hulled and sliced

½ cup crumbled feta cheese

¼ cup fresh basil leaves, chopped

¼ cup slivered almonds, toasted

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper, to taste

Cook the Couscous: In a medium saucepan, bring the vegetable broth to a boil. Once boiling, add the couscous and stir briefly. Remove from heat, cover, and let it sit for about 5 minutes until the liquid is absorbed. Fluff with a fork and set aside to cool.

    Prepare the Strawberries: While the couscous is cooling, prepare the strawberries by washing, hulling, and slicing them. Set aside.

      Mix the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to create a dressing. Adjust seasoning according to your taste.
