Ingredients

1 cup unsalted butter, melted

1 cup brown sugar, packed

1/2 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

Zest of 1 lemon

1/4 cup fresh lemon juice

1 1/2 cups fresh or frozen strawberries, chopped

1/2 cup white chocolate chips (optional)

Powdered sugar for dusting (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper, letting some overhang for easy removal later.

Mix Wet Ingredients: In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk together until smooth and creamy, then add in the eggs one at a time, followed by the vanilla extract. Mix well.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients until just combined. Do not overmix.

Add Lemon and Strawberries: Gently fold in the lemon zest, fresh lemon juice, chopped strawberries, and white chocolate chips if using. The batter will be thick and incorporate the ingredients without overmixing.

Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean with a few moist crumbs (but not wet batter).

Cool: Remove from the oven and allow the blondies to cool in the pan for about 15 minutes. Then, lift them out using the parchment paper and let them cool completely on a wire rack.

Serve: Once cooled, cut into squares. Dust with powdered sugar if desired before serving. Enjoy your delightful strawberry lemon blondies with a refreshing drink!
