2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 package (12 oz) of graham crackers

1/2 cup cream cheese, softened

1 cup mascarpone cheese

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries and granulated sugar. Toss gently and let them sit for about 30 minutes to allow the juices to release.

    Make the Whipped Cream: In a large bowl, using an electric mixer, beat the heavy whipping cream, powdered sugar, and vanilla extract on medium-high speed until medium peaks form. Be careful not to over-whip.

      Cream Cheese Mixture: In another bowl, beat the softened cream cheese until smooth. Then, gently fold in the mascarpone cheese until combined.

        Combine Mixtures: Carefully fold the whipped cream into the cream cheese mixture until fully incorporated.

          Layer the Cake: In a 9x13 inch dish, lay down a single layer of graham crackers on the bottom. Spread a third of the cheese and cream mixture over the graham crackers, followed by a generous layer of the macerated strawberries (with their juices). Repeat the layers two more times, finishing with the cheese and cream mixture on top.

            Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, so the graham crackers can soften and the flavors meld.

              Serve: Before serving, garnish with any remaining strawberries and fresh mint leaves if desired. Slice and serve chilled.
