Stuffed Zucchini with Ground Beef

4 medium zucchinis

1 lb ground beef (preferably lean)

1 cup cooked quinoa (optional for added texture)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 cup shredded mozzarella cheese

1 tsp Italian seasoning

½ tsp smoked paprika

½ tsp salt

¼ tsp black pepper

2 tbsp olive oil

Fresh basil, chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Zucchini: Slice the zucchinis in half lengthwise and gently scoop out the flesh, leaving about ¼ inch of the skin intact to create boats. Reserve the scooped-out flesh for the filling.

      Cook the Filling: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.

        Add Ground Beef: Increase the heat to medium-high and add the ground beef. Break it apart with a spatula and cook until it's browned, about 5-7 minutes. Drain any excess grease.

          Mix in Vegetables: To the browned beef, add the reserved zucchini flesh, diced tomatoes, cooked quinoa (if using), Italian seasoning, smoked paprika, salt, and black pepper. Stir well and let simmer for about 5 minutes to meld the flavors.

            Stuff the Zucchini: Remove the skillet from heat and stir in half of the shredded mozzarella cheese. Spoon the beef mixture into each zucchini half, pressing down slightly to pack the filling.

              Top with Cheese: Place the stuffed zucchini boats on a baking sheet lined with parchment paper. Sprinkle the remaining mozzarella cheese over the tops.

                Bake: Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is bubbly and golden.

                  Garnish and Serve: Remove from the oven, let cool slightly, and garnish with freshly chopped basil before serving.
