2 cups sugar snap peas, trimmed

1 cup cherry tomatoes, halved

½ cup radishes, thinly sliced

¼ cup red onion, thinly sliced

¼ cup feta cheese, crumbled

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey

Salt and pepper to taste

Fresh mint leaves, for garnish

Instructions
 

Blanch the Peas: Bring a pot of salted water to a boil. Add the sugar snap peas and blanch for 2 minutes until bright green and tender-crisp. Immediately transfer them to an ice bath to stop the cooking process. Drain and pat dry.

    Prepare the Veggies: In a large mixing bowl, combine the blanched sugar snap peas, cherry tomatoes, radishes, and red onion.

      Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.

        Combine: Pour the dressing over the salad mixture and toss gently until everything is evenly coated.
