Summer Corn and Tomato Salad

4 cups fresh corn kernels (about 4 ears of corn)

2 cups cherry tomatoes, halved (mixed colors for vibrancy)

1 medium red onion, finely diced

1 avocado, diced

½ cup fresh basil leaves, chopped

¼ cup extra virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey (or agave syrup for vegan option)

Salt and pepper to taste

Crumbled feta cheese (optional, for garnish)

Instructions
 

Prepare the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn and cook for 3-5 minutes until tender. Remove the corn, cool under cold water, and then cut the kernels off the cob. If using frozen corn, simply thaw and set aside.

    Combine the Ingredients: In a large mixing bowl, combine the corn, cherry tomatoes, red onion, avocado, and basil.

      Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined. Adjust seasoning to taste.

        Dress the Salad: Pour the dressing over the corn and tomato mixture, gently tossing to coat all the ingredients. Be careful not to mash the avocado.
