Summer Shrimp & Pineapple Rice Bowls

1 lb large shrimp, peeled and deveined

1 cup jasmine rice

1 ¾ cups coconut milk (canned)

1 cup fresh pineapple, diced

1 red bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

2 tbsp soy sauce

1 tbsp lime juice

1 tsp ground ginger

2 tbsp olive oil

¼ cup fresh cilantro, chopped (for garnish)

1 avocado, sliced (for topping)

Salt & pepper to taste

Lime wedges (for serving)

Instructions
 

Rinse and Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice with coconut milk and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    Prepare the Shrimp: While the rice is cooking, season the shrimp with salt, pepper, and ground ginger. In a large skillet, heat the olive oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.

      Cook the Shrimp: Add the seasoned shrimp to the skillet and cook for about 2-3 minutes on each side until they turn pink and opaque. Stir in diced red onion and bell pepper, cooking for an additional 2-3 minutes until the vegetables are tender.

        Add Pineapple & Sauce: Toss in the diced pineapple, soy sauce, and lime juice. Cook for an additional 2 minutes to combine the flavors, allowing pineapple to warm through.
