Summer Veggie Gnocchi

1 pound fresh gnocchi

2 tablespoons olive oil

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 medium yellow bell pepper, diced

1 cup fresh corn kernels (about 2 ears of corn)

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon fresh basil, chopped (plus more for garnish)

Salt and pepper to taste

½ cup grated Parmesan cheese (plus extra for serving)

A squeeze of fresh lemon juice

Instructions
 

Cook the Gnocchi: In a large pot of boiling salted water, add the gnocchi. Cook according to package instructions (usually about 3-4 minutes) until they float to the surface. Drain and set aside.

    Sauté the Veggies: In a large skillet, heat olive oil over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Add the Vegetables: Stir in the diced zucchini, yellow bell pepper, and corn. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp.

        Incorporate the Tomatoes: Add the halved cherry tomatoes to the skillet along with oregano, fresh basil, salt, and pepper. Cook for another 3-4 minutes until the tomatoes soften.

          Combine Gnocchi and Veggies: Gently fold the cooked gnocchi into the skillet with the veggies, allowing them to mingle in the flavors. Cook for an additional 2-3 minutes.

            Cheese and Lemon: Remove the skillet from heat and sprinkle with grated Parmesan cheese and a squeeze of fresh lemon juice. Toss gently to combine.
