1 cup orzo pasta

2 cups cooked chicken, shredded

1/2 cup sun-dried tomatoes, packed in oil, drained and chopped

1 cup spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/2 cup grated Parmesan cheese

12 mini phyllo pastry cups (store-bought)

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Mixture: In a large mixing bowl, combine the shredded chicken, chopped sun-dried tomatoes, chopped spinach, feta cheese, fresh basil, minced garlic, red pepper flakes, dried oregano, salt, and black pepper.

      Add Orzo: Once the orzo has cooled, add it to the bowl with the chicken mixture and drizzle with olive oil. Gently toss everything together until well combined.
