1 cup quinoa, rinsed

2 cups water

1 cup fresh strawberries, hulled and sliced

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup feta cheese, crumbled

1/4 cup walnuts or pecans, chopped

2 tablespoons fresh mint, chopped

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 teaspoon honey (or maple syrup for vegan)

Salt and pepper to taste

Instructions
 

Cook the Quinoa: In a medium pot, combine rinsed quinoa and water. Bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it cool.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper. Adjust the sweetness and seasoning according to your taste.

      Mix the Salad: In a large mixing bowl, combine the cooled quinoa, sliced strawberries, diced cucumber, red onion, feta cheese, walnuts, and freshly chopped mint.

        Dress the Salad: Pour the dressing over the salad mixture and gently toss until everything is well combined and coated with the dressing.

          Chill and Serve: Let the salad sit for about 10-15 minutes for the flavors to meld. Serve chilled or at room temperature. Garnish with additional mint or walnuts if desired.
