Ingredients

2 cups rolled oats

1 cup unsweetened applesauce

1 cup grated apples (about 2 medium apples)

1/2 cup brown sugar, packed

1/4 cup honey or maple syrup

1/2 cup almond milk (or any milk of choice)

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or cranberries (optional)

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Grease or line an 8x8 inch baking pan with parchment paper for easy removal.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, ground cinnamon, baking powder, and salt. Stir until well mixed.

Combine Wet Ingredients: In another bowl, whisk together the applesauce, grated apples, brown sugar, honey (or maple syrup), almond milk, melted coconut oil, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredient bowl. Stir until everything is fully incorporated. If desired, fold in the chopped walnuts (or pecans) and raisins (or cranberries) for added texture and flavor.

Transfer to Pan: Pour the mixture into the prepared baking pan, spreading it evenly with a spatula.

Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.

Cool and Slice: Remove the baking pan from the oven and allow it to cool in the pan for about 10-15 minutes. Then, lift the parchment paper to transfer the squares onto a cutting board. Cut into squares once fully cooled.

Serve & Enjoy: Enjoy the squares warm, or store them in an airtight container. They can be served as a delicious breakfast, a healthy snack, or even a dessert!
