2 ripe bananas, mashed

2 cups rolled oats

2 cups almond milk (or any milk of your choice)

1/4 cup honey or maple syrup (adjust sweetness to taste)

1/4 cup almond butter (or peanut butter)

1 tsp vanilla extract

1 tsp cinnamon

1/2 tsp baking powder

1/4 tsp salt

1/2 cup chopped nuts (walnuts or pecans), optional

1/2 cup dark chocolate chips or dried fruit, optional

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin pan with non-stick spray or line it with muffin liners.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond milk, honey (or maple syrup), almond butter, and vanilla extract. Whisk until smooth and well combined.

      Combine Dry Ingredients: In a separate bowl, mix the rolled oats, cinnamon, baking powder, and salt. Stir well to ensure the baking powder is evenly distributed.

        Combine Mixtures: Pour the dry mixture into the wet ingredients. Stir until just combined. If desired, fold in the chopped nuts and chocolate chips or dried fruit.

          Fill Muffin Pan: Using a spoon or a cookie scoop, evenly distribute the oatmeal mixture into the prepared muffin pan, filling each cup about 3/4 full.
