Sweet Banana Oat Breakfast Bars

2 ripe bananas, mashed

1 ½ cups rolled oats

½ cup almond butter (or any nut/seed butter of choice)

¼ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon baking powder

½ teaspoon cinnamon

¼ teaspoon salt

½ cup chopped nuts (walnuts or pecans)

½ cup dried fruit (raisins, cranberries, or chopped dates)

Optional: ¼ cup dark chocolate chips for extra sweetness

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Stir until you have a smooth mixture.

      Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, baking powder, cinnamon, and salt.

        Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients. Stir until everything is well combined.

          Add Nut and Fruit: Fold in the chopped nuts, dried fruit, and optional dark chocolate chips until evenly distributed throughout the mixture.

            Transfer to Baking Pan: Pour the batter into the prepared baking pan and spread it out evenly, pressing down lightly to ensure it holds together.

              Bake: Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.

                Cool: Remove from the oven and let the bars cool in the baking pan for about 10 minutes. Then lift out using the parchment paper and allow them to cool on a wire rack completely.

                  Slice and Serve: Once cooled, cut into squares or rectangles as desired. Store in an airtight container for up to a week, or freeze for longer storage.
