Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 cup dark chocolate chips (optional)

1/4 cup chopped nuts (walnuts or almonds work well)

1 tsp vanilla extract

1/2 tsp ground cinnamon

Pinch of salt

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

Combine wet ingredients: In a large mixing bowl, add the mashed bananas, almond or peanut butter, honey (or maple syrup), and vanilla extract. Mix together until smooth and well combined.

Mix in dry ingredients: To the wet mixture, add the rolled oats, ground cinnamon, chopped nuts, and pinch of salt. Stir until all ingredients are thoroughly incorporated.

Add chocolate chips: If you’re using dark chocolate chips, fold them into the mixture now, ensuring they are evenly distributed.

Transfer to baking pan: Pour the oat mixture into the prepared baking pan. Use a spatula to spread and press the mixture evenly into the pan.

Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown and the center has set.

Cool and slice: Once baked, remove the pan from the oven and allow it to cool in the pan for about 10 minutes. Use the overhanging parchment paper to lift the bars out and let them cool completely on a wire rack. Once cooled, slice them into bars or squares.

Store: Enjoy immediately or store in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
