1 lb (450g) ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, finely diced

1 cup water chestnuts, diced

3 green onions, chopped

3 tablespoons sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper, to taste

1 head of butter lettuce (or romaine), leaves separated

Crushed peanuts and fresh cilantro for garnish (optional)

Instructions
 

Heat the Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and garlic, sautéing until the onions are translucent, about 2-3 minutes.

    Brown the Chicken: Increase the heat to medium-high and add the ground chicken. Cook for about 5-7 minutes, breaking it apart with a spatula until browned and cooked through.

      Add Veggies: Stir in the diced red bell pepper and water chestnuts. Cook for another 3-4 minutes until the veggies are tender.

        Season the Mixture: In a small bowl, combine sweet chili sauce, soy sauce, rice vinegar, sesame oil, salt, and pepper. Pour this mixture over the cooked chicken and vegetables, stirring to combine well. Cook for an additional 2 minutes, allowing the flavors to meld.

          Assemble the Wraps: Remove from heat and stir in the chopped green onions. To serve, spoon a generous amount of the chicken mixture into the center of a lettuce leaf.

            Garnish: Top with crushed peanuts and fresh cilantro if desired, then fold the lettuce around the filling like a wrap.
