1 cup ripe bananas (about 2-3 medium bananas), mashed

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup semi-sweet chocolate chips (plus extra for topping)

1/4 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with non-stick spray.

    Mix Wet Ingredients: In a large bowl, combine the mashed bananas, granulated sugar, brown sugar, and melted butter. Stir in the egg and vanilla extract until well mixed.

      Combine Dry Ingredients: In another bowl, whisk together the baking soda, salt, and flour.

        Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

          Add Chocolate: Fold in the chocolate chips and nuts (if using), reserving a small handful of chocolate chips for topping.

            Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full. Sprinkle the reserved chocolate chips on top of each muffin.

              Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                Cool: Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
