2 medium sweet potatoes

1 cup canned black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (optional)

1/2 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Tortilla chips or homemade sweet potato chips for scooping

Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes into bite-sized pieces. Spread them out on a baking sheet, drizzle with olive oil, and toss to coat. Season with salt, pepper, cumin, and smoked paprika. Roast in the oven for about 25-30 minutes, or until tender and slightly caramelized.
