Sweet Potato & Spinach Bake

Ingredients
  

2 large sweet potatoes, peeled and thinly sliced

4 cups fresh spinach, washed and roughly chopped

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 cloves garlic, minced

1 small onion, diced

1 teaspoon olive oil

1/2 teaspoon nutmeg

Salt and pepper to taste

1/2 cup vegetable broth

1 tablespoon fresh thyme or 1 teaspoon dried thyme

Optional: A pinch of red pepper flakes for heat

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Garlic and Onion: In a skillet over medium heat, add olive oil. Once hot, add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant. Remove from heat.

      Mix Filling: In a large mixing bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, sautéed onion and garlic, nutmeg, thyme, and a pinch of salt and pepper. Mix until well combined.

        Layer the Bake: In a greased baking dish (about 9x13 inches), begin layering:

          - Start with a layer of sweet potato slices, then a layer of the spinach mixture.

            - Spoon out some of the ricotta mixture on top of the spinach.

              - Repeat the layering process until all ingredients are used, finishing with a layer of sweet potatoes at the top.

                Add Broth: Pour the vegetable broth evenly over the entire dish to keep it moist while baking.

                  Top with Cheese: Sprinkle the remaining mozzarella cheese on top of the final layer of sweet potatoes.

                    Bake: Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the cheese is golden and bubbly.

                      Cool and Serve: Allow the bake to cool for about 5-10 minutes before serving. This dish pairs well with a fresh salad or can be served as a hearty side to a protein of your choice.
