Ingredients

1 cup fresh strawberries, hulled and diced

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon lemon juice

1 cup almond milk (or any preferred milk)

1/4 cup chia seeds

1 teaspoon vanilla extract

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Strawberry Mixture: In a medium bowl, combine the diced strawberries, honey or maple syrup, and lemon juice. Gently toss everything together and set it aside for about 10-15 minutes. This allows the strawberries to macerate and release their juices.

Make the Chia Pudding: In a separate bowl, whisk together the almond milk, chia seeds, vanilla extract, and a pinch of salt. Make sure the chia seeds are evenly dispersed in the milk. Let this mixture sit for about 5 minutes, then whisk again to prevent clumping.

Refrigerate: Cover the bowls and place both the strawberry mixture and chia pudding in the refrigerator for at least 1 hour, or overnight for the chia pudding to fully thicken.

Assemble the Cups: Once the chia pudding has thickened, take it out of the refrigerator. In serving cups, layer the chia pudding at the bottom, followed by a layer of the strawberry mixture. Repeat the layers until the cups are filled, finishing with the strawberries on top.

Garnish: Optional – add a few mint leaves for a fresh touch.

Serve: Enjoy these delightful Sweet Strawberry Chia Cups chilled, as a breakfast treat or a refreshing dessert!
