Ingredients

For the Pizza Crust:

2 large flour tortillas

1 tablespoon olive oil

For the Refried Beans:

1 can (15 oz) refried beans

1 teaspoon taco seasoning

For the Toppings:

1 cup shredded Mexican cheese blend

1 cup cooked ground beef (seasoned with taco seasoning)

1/2 cup diced tomatoes

1/2 cup diced onions

1/4 cup sliced black olives

1/4 cup chopped fresh cilantro

1/2 cup sour cream (for drizzling)

1/4 cup jalapeños (optional)

1/2 cup salsa (for serving)

Instructions

Prepare the Refried Beans:

In a small saucepan, heat the refried beans over medium heat. Stir in the taco seasoning and mix well. Cook for about 3-5 minutes until heated through. Set aside.

      Create the Pizza Crust:

Brush one side of each flour tortilla with olive oil.

In a dry skillet over medium heat, gently toast each tortilla, oil side down, for about 2-3 minutes until they are lightly golden and crispy. Remove from the skillet and set aside.

            Assemble the First Layer:

Place one toasted tortilla on a baking sheet. Spread half of the seasoned refried beans evenly over the tortilla. Sprinkle half of the cheese blend on top, followed by half of the cooked ground beef.

                Add the Veggies:

Layer on half of the diced tomatoes, diced onions, black olives, and jalapeños (if using). Top with another layer of cheese.

                    Top with the Second Tortilla:

Carefully place the second toasted tortilla on top. Repeat the layering process by spreading the remaining refried beans, cheese, ground beef, and veggies.

                        Final Melting and Baking:

Preheat your oven to 375°F (190°C). Bake the assembled pizza for 10-12 minutes, or until the cheese is melted and bubbly.

                            Garnish and Serve:

Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro and drizzle with sour cream. Cut into wedges and serve with salsa on the side.
