1 lb ground beef (or turkey for a lighter version)

1/2 cup breadcrumbs (panko preferred for extra tenderness)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

2 cloves garlic, minced

1 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

For the Honey Sriracha Sauce:

1/2 cup honey

1/4 cup sriracha sauce (adjust to taste)

2 tbsp soy sauce

1 tsp apple cider vinegar

1/2 tsp sesame oil (optional, for added depth)

1 tsp cornstarch mixed with 1 tbsp water (for thickening)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef (or turkey), breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, onion powder, salt, and pepper. Mix until just combined; don’t overmix to keep the meatballs tender.

      Form the Meatballs: Scoop about 1.5 tablespoons of the mixture and roll into balls, placing them on the prepared baking sheet. You should yield about 20 meatballs.

        Bake the Meatballs: Bake in the preheated oven for 18-20 minutes, or until they are browned and cooked through (internal temperature of 165°F/74°C).

          Make the Honey Sriracha Sauce: While the meatballs are baking, whisk together honey, sriracha, soy sauce, apple cider vinegar, and sesame oil in a small saucepan over medium heat. Once combined, bring to a gentle simmer.
