1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1 cup uncooked jasmine rice

2 cups water or chicken broth

1 cup broccoli florets

1 medium carrot, julienned

½ red bell pepper, sliced

2 green onions, chopped

2 tablespoons sesame seeds (optional, for garnish)

For the Teriyaki Sauce:

¼ cup soy sauce (low sodium recommended)

¼ cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 1 tablespoon water (for thickening)

1 teaspoon minced ginger

1 teaspoon minced garlic

1 tablespoon vegetable oil (for cooking)

Instructions
 

Cook the Rice: In a medium saucepan, combine uncooked jasmine rice and water or chicken broth. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes, or until the liquid is absorbed. Once cooked, fluff with a fork and set aside.

    Prepare the Teriyaki Sauce: In a small bowl, whisk together soy sauce, mirin, brown sugar, rice vinegar, minced ginger, and minced garlic. Pour this mixture into a saucepan and bring it to a low simmer over medium heat. Once simmering, add the cornstarch mixture to thicken the sauce. Stir continuously for about 2-3 minutes until the sauce thickens. Remove from heat and set aside.

      Cook the Chicken: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the chicken pieces and cook until browned, about 5-7 minutes. Ensure the chicken is cooked through (internal temperature reaches 165°F/74°C).

        Add Vegetables: Add the broccoli florets, julienned carrot, and sliced red bell pepper to the skillet with the chicken. Pour half of the teriyaki sauce over the chicken and vegetables. Stir-fry everything together for an additional 3-5 minutes, or until the vegetables are tender but still crisp.

          Assemble the Bowls: Divide the cooked rice into serving bowls. Top each bowl with the teriyaki chicken and vegetable mixture. Drizzle the remaining teriyaki sauce over the top.
