Tofu Tacos with Mango Slaw

For the Tofu:

1 block of firm tofu, pressed and drained

2 tbsp soy sauce

1 tbsp lime juice

1 tbsp olive oil

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp garlic powder

Salt and pepper, to taste

For the Mango Slaw:

1 ripe mango, julienned

2 cups green cabbage, finely shredded

1/2 red bell pepper, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup red onion, thinly sliced

2 tbsp lime juice

1 tbsp honey or agave syrup

Salt and pepper, to taste

For Assembly:

8 small corn or flour tortillas

Avocado slices (for topping)

Lime wedges (for serving)

Instructions
 

Prepare the Tofu:

    - Cut the pressed tofu into bite-sized cubes and place in a mixing bowl.

      - Add soy sauce, lime juice, olive oil, smoked paprika, ground cumin, garlic powder, salt, and pepper to the bowl.

        - Gently toss to coat the tofu evenly. Let it marinate for about 15-20 minutes.

          Cook the Tofu:

            - Heat a non-stick skillet over medium heat.

              - Add the marinated tofu to the skillet and cook for about 8-10 minutes, turning occasionally until golden brown and slightly crisp on all sides.

                - Remove from heat and set aside.

                  Make the Mango Slaw:

                    - In a large bowl, combine julienned mango, shredded cabbage, sliced red bell pepper, chopped cilantro, and red onion.

                      - In a small bowl, whisk together lime juice, honey or agave syrup, salt, and pepper.

                        - Pour the dressing over the slaw and toss gently to combine. Adjust seasoning if needed.

                          Warm the Tortillas:

                            - In a dry skillet, warm the tortillas over medium heat for about 30 seconds on each side until pliable.

                              Assemble the Tacos:

                                - Place a generous spoonful of tofu onto each tortilla.

                                  - Top with the mango slaw, add a few slices of avocado, and garnish with fresh cilantro if desired.

                                    Serve:

                                      - Serve the tacos with lime wedges on the side for an extra zing!
