1 1/2 cups all-purpose flour

1/2 teaspoon salt

1/2 cup unsalted butter, chilled and cut into small cubes

4-5 tablespoons ice water

2 large ripe tomatoes, sliced

1 tablespoon olive oil

1 teaspoon balsamic vinegar

1 tablespoon fresh basil, chopped (plus extra for garnish)

1 cup ricotta cheese

1/2 cup shredded mozzarella cheese

1/4 teaspoon black pepper

1 egg, beaten (for egg wash)

Sea salt, for sprinkling

Instructions
 

Make the Dough:

    In a large mixing bowl, combine the flour and salt. Add the chilled butter cubes and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Slowly add the ice water, one tablespoon at a time, mixing until the dough just comes together.

      Chill the Dough:

        Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

          Prepare the Filling:

            In a medium bowl, combine the sliced tomatoes, olive oil, balsamic vinegar, chopped basil, and black pepper. Toss gently and set aside to marinate for about 15 minutes.

              Preheat the Oven:

                Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

                  Roll Out the Dough:

                    On a floured surface, roll out the chilled dough into a round shape, approximately 12 inches in diameter, about 1/8 inch thick.

                      Assemble the Galette:

                        Spread the ricotta cheese evenly in the center of the dough, leaving about a 2-inch border. Top with the mozzarella cheese and marinated tomato mixture. Bring the edges of the dough over the filling, pleating it as you go to create a rustic crust.

                          Add Finishing Touches:

                            Brush the exposed crust with the beaten egg and sprinkle sea salt on top for extra flavor.

                              Bake:

                                Bake the galette in the preheated oven for 30-35 minutes, or until the crust is golden brown and the cheese is bubbly.
