12 oz cheese tortellini (fresh or frozen)

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, roughly chopped

1/2 cup red onion, finely diced

1/2 cup mozzarella balls, halved or diced

1/4 cup pine nuts, toasted

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Optional: Grated Parmesan cheese for serving

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
