2 large ripe tomatoes, diced

1 medium cucumber, diced

1 cup feta cheese, crumbled

1/4 red onion, thinly sliced

1/4 cup fresh parsley, chopped

2 tablespoons extra virgin olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the diced tomatoes, diced cucumber, and sliced red onion.

    Add the crumbled feta cheese and chopped parsley to the bowl.

      In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well blended.
