Ingredients

2 pints cherry tomatoes (or grape tomatoes), halved

1 block (8 oz) feta cheese, in one piece

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Crusty bread or pasta, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Dish: In a large baking dish, toss the halved cherry tomatoes with olive oil, minced garlic, oregano, thyme, red pepper flakes, salt, and pepper until well coated.

Add the Feta: Make a space in the center of the tomatoes and place the block of feta cheese there. Drizzle a bit of olive oil over the feta and sprinkle it lightly with salt and pepper.

Bake: Place the baking dish in the oven and bake for 25-30 minutes, or until the tomatoes are blistered and the feta is soft and golden.

Mix It Up: Once out of the oven, use a fork to gently mash the feta, mixing it with the tomatoes and creating a creamy sauce.

Serve: Garnish with fresh basil leaves, and serve immediately with crusty bread for dipping or over your choice of pasta.
