Tropical Chicken Rice Bowl

2 cups jasmine rice

2 cups coconut milk

1 lb boneless, skinless chicken thighs

1 tbsp coconut oil

1 tsp garlic powder

1 tsp onion powder

1 tsp ground ginger

1/2 tsp chili flakes (optional, for heat)

Salt and pepper to taste

1 ripe mango, diced

1 cup pineapple chunks (fresh or canned)

1 red bell pepper, sliced

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Optional toppings: green onions, sesame seeds, and lime wedges

Instructions
 

Cook the Rice: In a medium saucepan, combine jasmine rice and coconut milk. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes, or until the rice is cooked and absorbs the coconut milk. Once done, fluff the rice with a fork and set aside.

    Prepare the Chicken: While the rice is cooking, season the chicken thighs with garlic powder, onion powder, ground ginger, chili flakes, salt, and pepper.

      Cook the Chicken: In a large skillet, heat coconut oil over medium-high heat. Add the seasoned chicken thighs and cook for about 5-7 minutes per side, or until golden brown and cooked through. Ensure the internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.

        Combine the Toppings: In a bowl, mix together the diced mango, pineapple chunks, sliced red bell pepper, chopped cilantro, and lime juice. Toss gently to combine.

          Assemble the Bowl: In each serving bowl, start with a generous scoop of coconut rice. Top with sliced chicken, the tropical fruit and vegetable mixture, and avocado slices.

            Garnish and Serve: Optional: Sprinkle with green onions and sesame seeds for added flavor and texture. Serve with lime wedges on the side for an extra zing!
