Tuna Melt Stuffed Tomatoes

4 large ripe tomatoes

1 can (5 oz) tuna in water, drained

1/4 cup mayonnaise

1/4 cup Greek yogurt (or sour cream)

1/2 cup shredded sharp cheddar cheese

1/4 cup finely chopped red onion

1/4 cup diced celery

1 tablespoon Dijon mustard

1 teaspoon lemon juice

Salt and pepper to taste

1/4 teaspoon garlic powder

Fresh parsley for garnish

1/2 cup breadcrumbs (optional, for topping)

Prepare the Tomatoes: Preheat your oven to 350°F (175°C). Slice the tops off the tomatoes and gently scoop out the insides with a spoon, leaving the outer shell intact. Reserve the pulp for the tuna mixture.

    Make the Tuna Filling: In a medium bowl, combine the drained tuna, mayonnaise, Greek yogurt, cheddar cheese, red onion, celery, Dijon mustard, lemon juice, garlic powder, and salt and pepper. Mix well until all ingredients are incorporated. If you want a crispy topping, you can fold in breadcrumbs at this stage.

      Combine with Tomato Pulp: Stir in about half of the reserved tomato pulp into the tuna mixture to add extra flavor and moisture.

        Stuff the Tomatoes: Carefully fill each hollowed-out tomato with the tuna mixture, pressing down gently to pack it in.

          Bake the Stuffed Tomatoes: Arrange the stuffed tomatoes in a baking dish. If you reserved any breadcrumbs for topping, sprinkle them on top of each tomato. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the tops are golden brown.

            Garnish: Once baked, remove the tomatoes from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley before serving.

              Serve: These stuffed tomatoes can be served warm or at room temperature, making them perfect for a light lunch or dinner. Pair with a side salad or some crusty bread for a complete meal.
