Ingredients

For the Cake:

2 cups all-purpose flour

1 ¾ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the Caramel Sauce:

1 cup granulated sugar

6 tablespoons unsalted butter

½ cup heavy cream

½ teaspoon sea salt

For the Topping:

1 cup chopped pecans (or walnuts)

1 cup chocolate chips (semi-sweet or milk)

Additional caramel sauce for drizzling

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.

Add Wet Ingredients: Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Beat on medium speed for about 2 minutes. Carefully stir in the boiling water until the batter is smooth (it will be thin).

Bake the Cakes: Divide the batter evenly between the two prepared cake pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

Prepare the Caramel Sauce: In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns a deep amber color. Remove from heat and carefully add the butter, stirring until melted. Slowly whisk in the heavy cream (be cautious, as it may bubble). Stir in the sea salt and set aside to cool.

Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Drizzle generously with the caramel sauce, then sprinkle with half of the chopped pecans and half of the chocolate chips. Place the second layer on top and repeat the process with more caramel, pecans, and chocolate chips.

Final Touch: Drizzle additional caramel sauce over the top and sides of the assembled cake for an extra decadent touch. You can also sprinkle some more pecans and chocolate chips on top for added texture and presentation.

Serve: Slice and serve your Turtle Caramel Cake, ensuring each slice has an equal amount of all the wonderful layers!
