Tuscan Mac and Cheese

8 ounces elbow macaroni or cavatappi

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon red pepper flakes (optional, for heat)

1 cup sun-dried tomatoes, chopped

1 cup spinach, roughly chopped

1 teaspoon Italian seasoning

1 tablespoon fresh basil, chopped (or 1 teaspoon dried)

2 cups heavy cream

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves for garnish

Instructions
 

Cook the pasta: Bring a large pot of salted water to a boil. Cook the macaroni or cavatappi according to package directions until al dente. Drain and set aside.

    Sauté the aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

      Add sun-dried tomatoes & spinach: Add the sun-dried tomatoes and chopped spinach to the skillet. Cook until the spinach wilts, about 2 minutes, then add the Italian seasoning and fresh basil. Stir to combine.

        Make the cheese sauce: Pour in the heavy cream and bring to a simmer. Gradually add the cheddar cheese, mozzarella cheese, and half of the Parmesan cheese. Stir continuously until the cheese melts and the sauce is smooth.

          Combine pasta and sauce: Add the cooked pasta to the cheese sauce. Mix well to ensure the pasta is fully coated. Season with salt and pepper to taste.

            Transfer to baking dish: Preheat the oven to 350°F (175°C). Pour the mac and cheese mixture into a greased 9x13-inch baking dish. Sprinkle the remaining Parmesan cheese on top for a golden crust.

              Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is bubbly and lightly golden.

                Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
