For the BBQ Mac and Cheese:

8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1/2 cup smoked gouda cheese, shredded

1 cup milk

2 tablespoons butter

2 tablespoons all-purpose flour

1/2 cup BBQ sauce (plus more for serving)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

For the Burger:

1 lb ground beef (80/20 for juiciness)

1/2 teaspoon smoked paprika

Salt and pepper, to taste

4 burger buns (preferably brioche)

4 slices of bacon, cooked until crispy

4 tablespoons crispy fried onions (optional)

Pickles (for garnish)

Instructions
 

Cook the Macaroni: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Gradually whisk in the flour to form a roux. Cook for 1-2 minutes until slightly golden. Slowly add the milk, whisking continuously until the mixture thickens (about 2-3 minutes).

      Add Cheese and BBQ Sauce: Reduce the heat to low and stir in the shredded cheddar and gouda cheese until melted and smooth. Add in the BBQ sauce, garlic powder, onion powder, salt, and pepper. Mix until well combined.

        Combine Mac and Cheese: Fold the cooked macaroni into the cheese sauce until evenly coated. Set aside.

          Prepare the Patties: In a mixing bowl, combine the ground beef, smoked paprika, salt, and pepper. Form into 4 equal-sized patties, pressing a small indentation in the center of each.
