1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup sour cream

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 packet (1 oz) taco seasoning

½ cup fresh cilantro, chopped

1 jalapeño, seeded and diced (optional for heat)

1 tablespoon lime juice

Tortilla chips for serving

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Mix Base Ingredients: In a large mixing bowl, combine the softened cream cheese and sour cream until smooth. You can use a hand mixer for quicker results.

      Add Spices: Stir in the taco seasoning, lime juice, and diced jalapeño if using. Mix until well incorporated.

        Layer the Dip: Spread the cream cheese mixture evenly in the bottom of a baking dish (9x9 inches works well).

          Add Beans and Corn: Layer the black beans on top of the cream cheese mixture, followed by the drained corn. Spread evenly.

            Tomatoes: Spoon the diced tomatoes and green chilies over the corn layer, spreading it out to cover the surface.

              Cheese Layer: Sprinkle the shredded cheddar cheese and Monterey Jack cheese evenly over the top.

                Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and slightly golden.

                  Garnish & Serve: Remove from the oven and sprinkle the fresh cilantro on top before serving. Serve warm with tortilla chips for dipping.
