1 cup all-purpose flour

1/4 cup almond flour

1/4 tsp salt

1 tbsp sugar

1/4 cup coconut oil, melted

1/4 cup vegan yogurt (plain or vanilla)

2 tbsp almond milk (unsweetened)

For the Strawberry Filling:

1 cup fresh strawberries, hulled and sliced

2 tbsp maple syrup

1 tbsp lemon juice

1 tbsp cornstarch

For the Vegan Cream Cheese:

1/2 cup vegan cream cheese (store-bought or homemade)

2 tbsp powdered sugar

1 tsp vanilla extract

1 tbsp almond milk (to adjust consistency)

For Garnish:

Sliced strawberries

Powdered sugar (optional)

Fresh mint leaves (optional)

Instructions
 

Make the Pastry: In a mixing bowl, combine the all-purpose flour, almond flour, salt, and sugar. Add the melted coconut oil, vegan yogurt, and almond milk. Mix until a dough forms. If the dough is too sticky, add a little more flour. Knead on a floured surface for about 5 minutes until smooth.

    Chill the Dough: Wrap the dough in plastic wrap and refrigerate for 30 minutes to firm up.

      Prepare the Strawberry Filling: In a small saucepan over medium heat, combine the sliced strawberries, maple syrup, lemon juice, and cornstarch. Stir gently until the mixture begins to bubble and thicken (about 5 minutes). Remove from heat and let cool.

        Make the Vegan Cream Cheese Filling: In a mixing bowl, whisk together the vegan cream cheese, powdered sugar, vanilla extract, and almond milk until smooth. Adjust the almond milk to reach your desired consistency.

          Assemble the Danish: Preheat your oven to 375°F (190°C). On a floured surface, roll out the chilled dough into a rectangle (approximately 1/4 inch thick). Cut the dough into squares (about 4x4 inches).

            Create the Filling Layers: Place a spoonful of vegan cream cheese in the center of each square, followed by a spoonful of the strawberry filling on top of the cream cheese.

              Fold the Pastry: Gently fold the corners of each square towards the center to create a pocket or a Danish shape. Pinch the seams to seal them.
