2 cans (15 oz each) chickpeas, drained and rinsed

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

1 can (14 oz) coconut milk

1 can (14 oz) diced tomatoes

2 tablespoons curry powder

1 teaspoon ground cumin

1 teaspoon turmeric

1 teaspoon paprika

1 tablespoon olive oil

Salt and pepper to taste

2 cups fresh spinach or kale, chopped

Juice of 1 lime

Fresh cilantro, for garnish

Cooked basmati rice or naan, for serving

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Introduce the minced garlic and grated ginger, stirring for another minute until fragrant.

    Add the Spices: Sprinkle in the curry powder, ground cumin, turmeric, and paprika. Cook for an additional 1-2 minutes, allowing the spices to bloom and intensify in flavor.

      Incorporate Tomatoes and Chickpeas: Pour in the diced tomatoes with their juices and the drained chickpeas. Stir to combine all ingredients thoroughly. Allow it to simmer for about 5 minutes so the flavors meld together.

        Add Coconut Milk: Slowly pour in the coconut milk, stirring to create a creamy, uniform sauce. Bring the mixture to a gentle simmer and let it cook for 15-20 minutes, stirring occasionally. If the curry thickens too much, add a splash of water.

          Add Greens: When the curry is almost done, stir in the chopped spinach or kale. Cook for an additional 3-5 minutes until wilted but still vibrant in color.

            Finish with Lime and Season: Squeeze in the lime juice and season the curry with salt and pepper to taste. Adjust seasoning if necessary.

              Serve: Ladle the chickpea curry over a bed of warm basmati rice or alongside naan. Garnish with fresh cilantro before serving.
