1 head of garlic

1 tablespoon olive oil

12 oz fettuccine pasta (or your preferred pasta)

2 cups heavy cream

1 cup freshly grated Parmesan cheese

4 tablespoons unsalted butter

Salt and pepper, to taste

1/4 teaspoon nutmeg (optional)

Fresh parsley, chopped (for garnish)

Additional grated Parmesan (for serving)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the garlic head to expose the cloves, drizzle with olive oil, wrap in foil, and roast for about 30-35 minutes until soft and caramelized. Allow it to cool, then squeeze the cloves out into a bowl and mash with a fork.

    Cook the Pasta: While the garlic is roasting, bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

      Make the Alfredo Sauce: In a large saucepan over medium heat, melt the butter. Add the mashed roasted garlic and sauté for 1-2 minutes until fragrant. Gradually pour in the heavy cream, stirring well. Let it simmer for 2-3 minutes.

        Add Cheese & Seasoning: Stir in the grated Parmesan cheese until melted and the sauce is smooth. If the sauce is too thick, gradually add a little reserved pasta water. Season with salt, pepper, and nutmeg, if using.

          Combine Pasta and Sauce: Add the cooked fettuccine to the sauce, tossing it gently to coat the pasta evenly. If needed, add more reserved pasta water to reach the desired consistency.
